So is the t-stat removable from the plastic housing or is it all put together in a way that isn’t practical?

Yes, commonly known as the Jarvik-7 in MINI circles.
Did one on my Clubman; only really hard part was being properly sure I had the clip for the large port on the left properly installed. No chance of seeing it, could only feel and not that very well.
